MO’s physical and organoleptic properties are enhanced by its extraordinary health benefits. It has a low acid content of less than 0.1%, it is rich in oleic acid (78%) and in linoleic acid (greater than 4%).
It contains very few saturated compounds but a considerable amount of polyphenols, biophenols and Oleocanthal in particular.
